Meet Our Founder, Ilana Eck:
Healthy baking is in my DNA.
I was inspired to create healthy treats like the ones my mom, Renée, used to make for me growing up. My mom was an excellent baker, and I spent many hours in the kitchen under her feet watching her bake whole grain muffins and quick breads she sweetened naturally using honey, maple syrup, molasses, homemade apple sauce, or dates.
My mom died of breast cancer when I was 9. She was only 46 years old. I sought comfort by spending time in her kitchen. To be honest though, my baking wasn’t healthy like my mom’s. As I got older, cookies became my baked good of choice. I’d come home from school and eat my feelings. As a result, I packed on quite a few extra pounds. While I wasn’t really self-conscious about the way I looked (I thought I was big boned!), I physically didn’t feel good.
I had my aha-moment while studying abroad in Israel. I always knew I wanted to have kids someday and decided, right then during my trip, to start living a healthier life so I could be around for them much longer than my mom was for me. I bought Israeli cookbooks, researched recipes, and devoured every piece of credible information I could find on healthy eating, organic farming, and nutrition.
While losing weight wasn’t my main motivation, I ended up losing 40 pounds. I went from a size 14 to a size 4 after 6 months of changing my lifestyle for the better.
In 2005, when my husband Etienne and I got married, I started to have serious stomach issues. Everyone said it was the stress of planning a wedding, but I knew it was more than that. When we got back from our honeymoon, I decided to try cleaning up my diet by cutting out all common allergens for a few weeks and limiting myself to only whole, super easy to digest foods: lentils, fish, brown rice, fruits, and veggies.
After two weeks, I slowly added other foods back into my diet, one at a time. And quickly realized IT WAS GLUTEN. Under the care of a gastroenterologist, I eliminated all gluten from my diet. Cutting out wheat made a world of difference in how I felt and looked. Gone were the days of feeling bloated, itchy with random rashes, and having low energy.
I’ve been gluten-free for 15 years, and eating wholesome, nutrient dense foods like the treats we make at Stylish Spoon has made me feel good inside and out. And feeling better is super empowering.
