Boo-schetta: Ghost Toast

Boo-schetta: Ghost Toast

As soon as October hit, My daughter decided it was time to go all out for Halloween (she definitely gets that from her mom)! One of our new favorite spooky snacks is Boo-schetta, a playful twist on bruschetta using Superseed Bread.

Ingredients:
  • Superseed Bread
  • Pesto
  • Mozzarella (cut into ghost shapes)
  • Black Sesame Seeds

Note: For the eyes, you can use a straw to poke holes in the mozzerella, drops of blasamic vinaigrette, or black sesame seeds. If you have everything bagel seasoning you can take a few from there - that's what I did!

Instructions:
  1. Toast slices of Superseed Bread until they’re crispy.
  2. Once toasted, spread a thin layer of pesto over the bread.
  3. Cut mozzarella slices into ghost shapes using a cookie cutter, and place them on top of the pesto.
  4. For the eyes, dot with balsamic vinaigrette, sprinkle black sesame seeds, or use a few seeds from everything bagel seasoning.
  5. Serve immediately and enjoy!

Pro Tip: Even if they soften after a day, Boo-schetta still makes a great snack on day two. My family couldn’t get enough! Happy haunting!
